Amy & Chris, a husband-and-wife duo born and raised in Ireland, stumbled upon the Liberties and instantly fell in love with its vibe. Inspired by the area’s rich history and rebellious spirit, they set out to transform a crumbling coffee shop into something fun.
As the final touches were coming together in late 2024, Amy and Chris welcomed their first daughter - a moment that reshaped everything. Inspired by the idea of building something lasting, they decided to name the café after her. It was a tribute not only to new life but to the legacy they hoped to create, one rooted in family, community, and the future of the Liberties.
And just like that, a new chapter began. For the coffee shop, the Liberties and the O’Sullivan family.
Ada is so much more than just a café, it is a local haven where locals & tourists can experience the rich history of the Liberties over an Irish bagel and an unreal cup of coffee.
The Liberties

Rooted in the heart of the Liberties, and just a short walk from the number 1 thing to do in Dublin, Ada is the perfect spot to take a break on your day trip and enjoy the great food and coffee Ireland has to offer.

Bagels:
Our bagels are made fresh for every order, right in front of you. We source the best, local ingredients that take our bagels to the next level. Our goal is to bring you real food, with unreal flavour at a great price.
Coffee:
Whether you're after a cosy flat white or a classic iced americano, we’ve got the brew for you. All of our coffee is barista-made, using freshly ground single-origin beans from Roasted Brown – a local roaster in County Wicklow, creating our absolute favourite cups of coffee.
Matcha:
Our matcha hits different. It’s 100% organic, ceremonial-grade, and sourced from Mafia Matcha - a badass female-owned Irish supplier. Smooth, vibrant, and never bitter - we whisk it fresh for every cup. Whether you're team oat iced or all about a classic latte, this is matcha that actually tastes as good as it looks.
Hot Chocolate:
Made with real chocolate flakes from Irish chocolatier Ó Connaill, our hot chocolate is seriously class. It’s rich, velvety and just the right amount of indulgent. No syrup, no shortcuts, just a good ol’ cup of pure comfort.
The Art:
We’re proud to showcase local talent, and nothing says modern Irish creativity like the work of Al Maser. His bold, contemporary pieces bring the walls to life with colour, movement, and meaning. It’s a celebration of Irish art, energy, and the vibrant culture that inspires everything we do.
